The course is optional in the Food Chemistry study module.

Recommended to be taken in the last part of the master studies.

The student is able to apply obtained knowledge on a selected special field in food chemistry to understand and solve chemistry-based questions related to food quality or analysis.

Recommended timing during the 2nd year. The examination can be carried out on all general examination days in Food Chemistry.

The content is chosen based on interest of the student, e.g., to focus may be on chemistry of food components and ingredients, quantitative and structure analysis of food components, quality of food ingredients and foods.

Literature will be selected from a list of recommended books in Moodle. Other books may be suggested by the student.

Simultaneously studying students are encouraged to form reading groups. The teacher may take part in discussion as agreed with the students. After written examination the student will get oral feedback.

The performance in the examination will be graded using a scale 0-5.

Independent reading for 135 h and a written examination.
